BACK TO SCHOOL

I can't believe summer is already over. My daughter Chiara, started back to school but I am still in the summer mind. The day-to-day lunch preparation just snuck up on me.

I dont' know about you, but I am ready for the routine of school to be back --just not the early mornings and lunch packing. It is time to re-enlist my favorite school year time saver, the freezer sandwich! I'm excited to be wiring from New York where i will be sharing this tip on Friday morning on the CBS Early Morning Show.

Grandma Esther, my husbands grandma, told me about this tip years ago. She would freeze sandwiches and bring them on the airplane when she traveled. Boasting they would be delicious and thawed out by the time she was ready to eat. (Although, she most likely made liverwurst sandwiches, so not so much delicious in my book!) After I got over my initial "that sounds disgusting" thought, I decided to give it a try. THANK YOU, GRANDMA ESTHER! It has been the best lunch tip that I have lived by for years. Sunday night we try and get the week's worth (or more) of sandwiches made, and in the freezer.

After that, we bag up chips and cut up fruit or veggies for a few days so in the early morning, (in my caffeine deprived state...) I can get lunch thrown together in under a minute and it is completely stress free.

I saw your back to school video on Fox news channel, and it sounds great. I am trying to fix a healthy breakfast and lunch for myself and my husband, and I'm not a morning person either, so the freezer sandwich sounds awesome. I'd like to see a list of things that should or should not be frozen for sandwiches.
